As the third in this series, I chose a recipe for something sweet. And colorful as well. The red color symbolizes different things and qualities across different cultures – fire, luxury, courage, sin, defiance or revolution.
If we had to choose a color for love, red would certainly win. After all, red is the color of the heart – a symbol of love. And we all need love in these difficult times. That’s why I chose this red dessert and remembered my loved ones and friends, whom I can’t meet right now…
Raspberry Cream with Chia
We need:
500 ml cream
40 g sugar
4 slices of gelatin
milk for gelatin soaking
1 vanilla sugar
250 g raspberries
150 ml of milk
250 g white yogurt
2 tablespoons of brown sugar
2 teaspoons of lemon juice
4 tablespoons of chia seeds
raspberries for decoration
Method:
Soak the gelatin in cold milk. Cook half of the cream with sugar, let it cool a little. Whip the rest of the cream. Add the squeezed gelatin and whipped cream into the milk-cream mixture. Pour into small bowls and allow to set for at least 3 hours in the refrigerator. Mix raspberries with milk, yogurt, brown sugar and lemon juice. Add chia seeds and pour the raspberry cream into the bowls with white cream and leave for at least another 3 hours in the cold. Decorate with the remaining raspberries.
