I confess that today, I had a little crisis from the current situation. So I thought I would brighten both my day and my mood with a “yellow recipe”.
Maize Soup with Turmeric
We need:
1 onion
1 clove of garlic
20 g ginger root
1 root parsley
2 tablespoons of oil
1 tablespoon turmeric
½ tablespoon anise
750 ml chicken stock
340 g maize (dripped from a can)
chopped parsley leaves
thin strips of chicken
lemon juice
turmeric
fennel
salt
black pepper
Method:
Cut the onion and garlic into small pieces, slice ginger and parsley. Heat oil in a pot, add turmeric, anise, then onion, garlic, ginger and parsley and roast for 2 minutes. Pour the stock over, add 200 g of corn, season with salt and black pepper and simmer for 15 minutes. Marinate chicken in a mixture of lemon juice, turmeric, fennel, salt and black pepper. Then put it on the skewer and roast it from all sides. Mix and strain the soup. Serve garnished with the remaining maize kernels, chopped parsley and chicken skewer.
And I put a new spring tablecloth on the table!
