Did you know that roasted almonds belong to the traditional products which can be found at any Christmas market in Vienna? Usually with cinnamon, boiled in sugar water, roasted and caramelized. Also, in my home country, Slovakia, we use almonds for Christmas baking very often.
The fruit of the almond is a drupe consisting of an outer hull and a hard shell with the seed. Recently, many talk about how healthy almonds are and consider them as superfood.
In our family, we have baked cookies with almonds for several years. Because we also like nuts, we add hazelnuts into the dough as well. These cookies can be stored in a well-closed box for a longer time. But usually, we eat them up very quickly… 🙂
COOKIES WITH ALMONDS AND NUTS
We need:
4 egg whites
140 g flour
140 g caster sugar
a handful of almonds (and hazelnuts or other nuts – you should adapt the amount to your own taste. In our family, we prefer to have a lot of nuts)
butter and breadcrumbs to grease and flour the baking form
Method:
Whip the egg whites and gradually add sugar. Mix with the flour and then with the almonds and nuts. Grease and flour a rectangular baking form with breadcrumbs, pour the dough in and bake at 180°C for 35-40 minutes. Let it cool, wrap it in a dishtowel and leave it rest until the next day.
The next day, cut the cake in thin slices (2-3 mm), put them on a tray lined with baking paper and bake them at 150°C for 10-15 minutes until they start to become light brown. Turn the slices quickly and bake for 5-10 more minutes.
